Classic Bread and Butter Pudding 26/05/2009

Serves 6-8

Description:

Classic Bread and Butter Pudding

Ingredients:

Bread & Butter Pudding:
1 Loaf of sliced white bread
750ml of milk
500ml of cream
150g caster sugar
1 vanilla bean
Ground cloves
Ground nutmeg
150g butter
100g sultanas
6 egg yolks
3 whole eggs

Stewed Apples:
4 peeled apples
100g butter
100g caster sugar
Pinch ground cloves
Pinch ground nutmeg
Pinch ground ginger

Method:

In a pan bring the milk and cream to the boil with the vanilla pod.

In a mixing bowl whisk together the egg yolks and the whole eggs with the caster sugar.

Pour the boiling milk and cream over the eggs and mix together.

Spread the bread with the butter and remove the crusts.

Butter a baking dish and lay the buttered bread in the dish and sprinkle with the sultanas as you go.

Then pour the hot egg mix over and allow to stand for 15 mins to allow most of the egg mix to be soaked into the bread.

Dust with some caster sugar some small knobs of butter and a sprinkle of ground cloves and nutmeg.

Bake in a medium oven for 30 mins until almost set and caramalised.

Remove and dust the pudding with some icing sugar.

Stewed Apples:

In a small pan melt the butter, add the sugar and the spices and cook together, add the apples and a small splash of water cook on the top until the apple is tender.

Then cover with a lid remove from the heat and allow to stand for 15 mins.

Notes:

Spoon the hot bread and butter pudding onto a plate serve with double cream and a spoon of the stewed apples.
